A Harvest Blessing in Every Bite

Lughnasadh (also known as Lammas) marks the first harvest of the year — a time to give thanks for the grain, the sun, and the abundance of the earth. Cornbread, made from the gifts of the field, is a perfect offering for this sabbat. Bake it with intention, share it with loved ones, and honour the turning of the wheel.

Ingredients

  • 2 eggs
  • 2 cups buttermilk
  • 3 tbsp. shortening, melted
  • 1½ tsp. salt
  • 2½ cups cornmeal
  • 1 tsp. baking powder
  • ½ tsp. baking soda

Method

  1. Preheat your oven to 375°F (190°C). Grease a baking pan and set aside.
  2. Beat the eggs in a large bowl, then add the buttermilk and melted shortening. Mix well.
  3. In a separate bowl, combine the cornmeal, salt, baking powder, and baking soda.
  4. Add the dry ingredients to the egg mixture and beat until smooth.
  5. Pour the batter into your greased pan.
  6. Bake for approximately 25 minutes, until golden on top and a toothpick comes out clean.
  7. Serve hot — ideally at your Lughnasadh table, with honey or herb butter.
