A Feast for the Autumn Equinox

Mabon — the autumn equinox — is a time of balance, gratitude, and the second great harvest. Day and night stand equal, and we pause to give thanks for all that has been gathered before the darkness deepens. A whole roasted chicken, fragrant with sacred herbs and golden from the oven, is one of the most traditional and beloved centrepieces for the Mabon table.

Rosemary for protection and remembrance. Thyme for courage and purification. Lemon balm for love, healing, and success. Lemon to cleanse and uplift. Together, they make a roast that nourishes far more than the body.

Ingredients & Their Magic

  • 1 whole chicken
  • 2 lemons, cut into chunks (unpeeled)cleansing, purification, love, uplifting energy
  • 1 onion, cut into chunksprotection, stability, prosperity
  • A handful of fresh herbs: rosemary, thyme, and lemon balm
    • Rosemary — protection, remembrance, mental clarity, purification
    • Thyme — courage, purification, healing, good health
    • Lemon balm — love, healing, success, calming energy
  • Half a stick of salted butterwarmth, nourishment, abundance
  • Generous salt and peppersalt for purification and protection; pepper to banish negativity

Method

  1. Preheat your oven to 350°F (175°C). As it warms, set your intention for the meal — who are you nourishing, and with what energy?
  2. Rub salt and pepper generously all over the chicken, inside and out. As you do, visualize a protective, golden light surrounding the bird.
  3. Squeeze a lemon chunk into the cavity, then stuff it with the remaining lemon chunks, onion pieces, and fresh herbs. Tie the legs closed to seal in the magic.
  4. Place on a roasting pan. Roast at 350°F for 20 minutes per pound, until the internal temperature reaches 165°F (74°C).
  5. When 40 minutes remain (or before the skin gets too dark), melt the butter and pour it lovingly over the chicken. Return to the oven.
  6. Every 10–15 minutes, baste the chicken with the pan juices — each baste is an act of care and intention.
  7. Remove from the oven and allow to rest before carving. The resting time is sacred — let the energy settle.
  8. Carve, serve, and share with gratitude.

As you prepare this meal, reflect on the balance of Mabon — light and dark, giving and receiving, effort and rest. This is a time to count your blessings and release what no longer serves you before winter arrives.

Before eating, go around the table and have each person name one thing they are grateful for from the past year. This simple act of spoken gratitude is one of the most powerful Mabon rituals there is.

The leftover bones can be simmered into a nourishing broth to carry the magic of the meal forward through the week. Nothing from a sacred feast goes to waste. 🍂
