Mabon Heather "Wine" (Makes Four Bottles)

As the wheel turns to Mabon, we honour the harvest with this ancient and gentle brew. Heather Wine is a beautiful ritual drink to share at your autumn equinox table — earthy, grassy, and deeply rooted in Celtic tradition.

What You'll Need

  • At least 1 lb of fresh heather (upper stalks and flowers only)
  • 1 gallon water
  • 4 cups sugar
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice, ground
  • 1/4 cup lemon juice
  • Casks or bottles for storing

Instructions

  1. Gather at least 1 lb of fresh heather. Use the upper stalks and flowers only.
  2. Boil the heather with 1 gallon of water in a large stockpot until the mixture resembles a dark tea. If the colour is weak, add more stalks and flowers — the mixture should be opaque.
  3. Remove from heat and strain. Discard the heather.
  4. Allow the mixture to cool, then add: 4 cups sugar, 1/4 teaspoon nutmeg, 1/4 teaspoon ground allspice, and 1/4 cup lemon juice. Stir well to combine.
  5. Pour into casks or bottles and seal.

Serving

Heather Wine has a gentle, grassy flavour. Serve chilled and enjoy as part of your Mabon feast or ritual.
