Samhain Pumpkin Soup

Jules Nakonecznyj

A warm bowl for a chilly Samhain evening, this creamy pumpkin soup brings together fresh pumpkin, honey, allspice and thyme. Prepare your pumpkin in advance and tuck a few bags into the freezer so you can return to this comforting recipe throughout the season.

Prepare the fresh pumpkin

Peel the pumpkin and remove the seeds and stringy centre. Cut the flesh into 1-inch pieces. Measure into freezer bags, with 4 cups of pumpkin in each bag, and freeze for future batches of soup. Reserve 4 cups for the pumpkin mixture below.

Part One: Honey and Allspice Pumpkin Mixture

Ingredients

  • 4 cups fresh pumpkin, peeled, cleaned and cut into 1-inch pieces
  • 4 cups water
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons honey
  • ½ teaspoon ground allspice

Method

  1. Place the pumpkin, water and salt in a large saucepan. Bring to a boil over high heat.
  2. Reduce the heat to low. Cover and simmer for 25 minutes, or until the pumpkin is fork-tender.
  3. Drain slightly, then mash the pumpkin.
  4. Stir in the butter, honey and allspice. Mix well. Measure 1½ cups of this mixture for the soup.

Part Two: Creamy Pumpkin Soup

Ingredients

  • 2 tablespoons butter
  • ½ cup chopped onion
  • 2 cups chicken stock
  • 1 large potato, peeled and diced
  • ½ teaspoon salt, plus more to taste if needed
  • ¼ teaspoon pepper
  • ¼ teaspoon thyme
  • 1½ cups mashed pumpkin mixture from Part One
  • 2 cups whipping cream

Method

  1. Place the butter and onion in a large saucepan. Sauté until the onion is translucent and soft. Do not brown.
  2. Add the chicken stock, potato, salt, pepper and thyme. Bring to a boil, then simmer gently until the potato is tender.
  3. Allow the soup to cool a little. Stir in the mashed pumpkin mixture and whipping cream. Taste and add more salt if needed.
  4. Blend until creamy and smooth. If using a countertop blender, let the soup cool enough to blend safely, work in small batches and follow your blender’s instructions for warm liquids. Never seal hot soup in a closed blender.
  5. Return the soup to the saucepan and gently heat through. Serve warm.
